Prosecco (4.5L)
1.5Kg Rhubarb
750ml White Grape Juice
850g Sugar
GV3 or Lalvin EC-118 Yeast
(Optional 3 large Elderflower heads / 28g dried flowers - One gallon with, one without)
Leave for 6 weeks, then:
40g Sugar
Bottle for 2 weeks

Rhubarb, Cranberry & Red Grape (4.5L - 6 Bottles)
800g Rhubarb
1L Cranberry Juice
0.75L Red Grape Juice
900g Sugar
GV5 Yeast

Rhubarb, Apple & White Grape - Sparkling (4.5L - 6 Bottles)
900g Rhubarb
1L Apple Juice
0.5L White Grape Juice
810g Sugar
Lalvin EC-118 Yeast
Leave for 6 weeks, then:
30g Sugar to 4 bottles worth, to bottle for 2 weeks &,
Blend 2 bottles worth with 2 bottles of the above Rhubarb, Cranberry & Red Grape:

Rhubarb, Apple, Cranberry, White Grape and Red Grape (3L - 4 Bottles)
1.5L Rhubarb, Cranberry & Red Grape + 1.5L Rhubarb, Apple & White Grape = 4 Bottles, leaving, 4 Bottles of both of the above

125g Sloes (Dried including stones)
0. 5L Grape Juice (White or Red)
950g Sugar
GV2 Yeast

Rhubarb, White Grape & Citrus Zest (4.5L)

Half an Orange Zest (No white),

Pinch of coriander seeds, and,

1tbsp dried / 4 tbsp fresh basil leaves
