I have been reading alot of lemonade / hard tea recipes and it seems that most people try to emulate Mike's Hard Lemonade (which is a malt beverage). My questions are:

1. Why do I not see malt in these recipes.
2. How much malt (lets say LME) would be needed for a 5 gallon batch.
 
On the Cider forum there are several threads containing comments and recipes for Graff, using DME (convert amounts to LME if you'd like) instead of sugar. Very good reviews. I'm think that much of it would carry over to what you're looking for.
