So I just got my Williams kit and was planning to brew on Sat. However, I read on the sanitizer bag that you need to rinse equipment before use.

Problem is, water here in Mexico is not the best. As in, I dont drink it. We use bottled water.

I assume, I will just have to rinse each piece with bottled water??

I ordered some star san last night, but doubt I will get it in time. UGh, oversight on my part.

That packet isn't actually a sanitizer, it's a cleaner. Definitely wait for the star san.

Are you using bottled water for the beer itself as well? If not I suggest you do.

I am in no way medically/scientifically qualified to determine this, which is why I'm phrasing it as a question:

Doesn't boiling the water make it safe? I don't know about Mexico specifically, but I believe that's why beer was safer to drink than water for most of recorded history. Right?

Regardless, if you're doing a partial boil, I wouldn't top off with anything but bottled water. And +1 on waiting for the Star San. It will suck if you don't get to brew this Saturday, but better than risking a whole batch due to poor rinsing or infection.

I feel like a williams brewing spokesperson now since it's all I've commented on yet...

Regardless, on batches when my dad and I were out of star san, we just used the packet that came with our kit and it cleaned things just fine, no infected beer.

That being said, if you don't have clean water to rinse with, it probably is best to wait for the star san.

Boiling water does sterilize it from waterborne bacteria and diseases making it safe to drink, however the issue with Mexico's water isn't just biological. Could you drink the beer and not get sick? Sure most likely. But it will taste poorly.

Think about it this way, would you use water from a mud puddle even boiled down? Kinda where it is at with Mexico's water. And you say it can't be worse than water throughout history, but I am willing to bet that it is.
 
The problem with Mexico water is that in areas especially in the DF, they had the brilliant idea to run water lines next to sewer lines...you get the picture.

We use bottled water for everything. I have used tap, just boiled it and or used a UV light on it to purify it. Cant comment on water taste because I dont drink it.

I guess I could just rinse with bottled water?

Regardless, I think my brew is on hold because I also realized Williams did not include the O-ring for the fermenting bucket lid. They sent one out to me today, but there is no way I will get it for this weekend. So I will probably just brew next Sat and will have star san and o-ring by then.
