Living in a tropical climate where the outside temp is 32 degrees centigrade is always a challenge to keep fermenting temps as close to optimum. Normally I keep the fermenting bin in a polystyrene box with as many frozen water bottles as possible and change them out every 12 hours... This keeps about 17-19 degrees c. The problem is I'm away for the weekend Friday pm to Sunday Pm. So what I was planning was to fill a plastic box with water and put loads of frozen bottles in then put my polystyrene box in with some holes cut in and fill that with water and bottles too... Active fermentation is pretty much over or close to it been in the bin for 7 days... What do you reckon?
