I put my dubbel in the keg a little early, but its all carbed up and chilled. Would it hurt if I took it out for a few more weeks at room temperature even though its already been chilled and carbed?

You should always resist the urge to keg or bottle beer early. Ale and lagers need time for the yeast to do their work of cleaning up after themselves after the main fermentation has taken place. If you deprive them of this oportunity they just take a lot longer to do that. This should take place at fermentation temperature. If you chill to early then this stops happening and the beer is not conditioned by the yeast. You can not speed up natural processes. Slow down and enjoy the process.
