When you're doing a simple extract/steep recipe, will steeping wheat malt extract the proteins that aid head retention?
I'm thinking of adding 0.5 lbs wheat malt and 0.5 lbs carapils to my steeping grains (chocolate, brown, crystal) to add head/body.
I don't see why this wouldn't work since I'm not trying to convert starch to sugar, just extract proteins.
