Hi all,

I have a gallon of cider in secondary. OSG was 1.071 then I sampled it at 1.010 and decided it was the the perfect sweetness. I am going to bottle it and let it carbonate up a bit in the bottle then stove top pasteurize to halt the fermentation so I can have slightly sweet cider with plenty of carb.

Here is my question though...

I cold crashed it to bring fermentation to a crawl then racked it off the leas (spelling?) and have had it in a secondary jug for two days now, still cold crashing, but it just doesn't seem to be clearing up.

Will it never get clear since I didn't let it fully ferment out?

Oh yes, and I did use pectic enzyme at the start. I had also raised the specific gravity with light brown sugar.

It will clear, it just takes time.

You could use Sparkolloid, but that will still take 2 - 3 weeks.

should I keep it cold crashing in the fridge so it doesn't ferment out? Also, is there noticeable difference in taste between a cleared cider and a foggy one?
