I’ve lately become obsessed with this ingredient in my cooking - I’m wild about its scent and zingy flavor. Has anyone tried using dried wild Sicilian oregano as a brewing spice or hops substitute? I might try it but I’m interested in hearing from anyone else’s experience

The Homebrewers Garden has an oregano beer in it, I believe it’s either a basic ale or lager with the oregano additions on the aroma end of the boil. Maybe a simple grain and hop bill to let the oregano shine? Or could try mumm.

I’ve used basil (very small quantity) in a Belgian style triple and it worked well. From then on, I always think of that style as a good base for herb beers.
