0.50 lb Cara-Pils/Dextrine (2.0 SRM) Grain 14.29 %
1.00 oz Saaz [4.00 %] (60 min) Hops 29.1 IBU
0.75 oz Saaz [4.00 %] (30 min) Hops 16.7 IBU
0.75 oz Saaz [4.00 %] (10 min) Hops 7.9 IBU


Local brew store recommended safale05 or nottinghaml. I am not sure which would be better suited. I got this recipe from HBT.

WCPA? I'm racking my brain here. I've heard it as "West Coast IPA" but not with saaz hops so I'm at a loss.

What kind of beer are you trying to make? If it's a lager, use a Bavian lager yeast. If it's a German ale, use a kolsch yeast or German ale yeast. Otherwise, I don't know.

The recipe looks like a Bohemian Pilsner.
 
You won't be upset with Safale-05. If you don't like the hop flavor from the Saaz let me know and I'll come over and drink it.
 
I found this recipe on HBT Sun and now cannot find it. LOL. Can I swap some of the Saaz for something else? Cascade or Columbus or?

Sure, you can easily do that. But in order to help out, we'd have to know what you want. A German lager? An American pale ale? The basic ingredients look like a German lager, but you can keep the malt bill and change up the hops and times, and have a pale ale.
 
LOL. Not sure what it was supposed to be. This will be my 2nd attempt. My first is still fermenting in my Mr. Beer keg. This is also a 2.5 gallon recipe to fit in the keg.

If you want a west coast pale ale, I'd sh*t can the following:

The carapils - extract has it in the mix anyway

Saaz - not a usual WC variety, look to the American citrus variety: Amarillo, simcoe, cascade, colombus, chinook, centennial etc.
 
The USA does not have a monopoly on West Coasts. Canada, Australia, England, Ireland, Scotland and Belgium all have West Coasts and proud brewing traditions!

For any recipe, I'd change the 30-minute hops to flameout hops. Bearing in mind that US-05 and Nottingham will not produce wildly different beers:
You can brew it basically as written and have an ale version of something like a Czech Pilsner, although I'd drop the carapils.
You can sub Crystal-40 and/or Biscuit malt for the carapils and Cascade for the saaz and make an APA.
You can sub Crystal-40 and/or Biscuit malt for the carapils, EKG for the saaz and S-04 for the yeast and make an ESB.
You can sub 3oz Roasted Barley and 5oz Flaked Barley for the carapils, EKG or Fuggles for the saaz and make an Irish Stout. You'd really only need the 60-minute hops here.
You can sub Biscuit malt for the carapils, any Belgian yeast for the yeast and make a Belgian Pale.
 
Ok. I adjusted the recipe to :
3.00 lb Pale Liquid Extract
1.00 oz Cascade
0.75 oz Cascade
0.75 oz Cascade

How is that? I can pick up Sat from my LHBS.
