First question: I am wanting to make some light (cheap) beers for everyday because the coopers kits just arent doing it for me anymore but I drink too much to be drinking the good stuff all the time. These will be 3.5-4% beers for during the week. I dont want to tie up the space in my fridge to control the temp and the lowest I will be able to manage will be constant at 65F. So I was wondering if I would be able to do a helles or marzen or the like using a lager yeast at this high temp without too much drama or if I would be best sticking with ales yeast and maybe getting some S-05 (currently Im using S-04) and making a blonde. The yeasts I can get are the Fermentis W34/70 and the S23. What do you guys think?

Also so as not to start a new thread, I am wanting to make a trappist ale but have no access to any appropriate yeast. Could using the S23 at higher temps work to allow the fruity esters to show through or is that just stupid?

Cheers :mug:

Yeah I know its a go to strain for you guys in the US. Ive not tried it yet but hear its dryer and crisper than the S-04. I will have some session bitters that I will be doing soon using S-04 so I am looking for something to enjoy when the suns out, were heading into winter down here so I have to make the most of it.

I'd go with S-05 for the pseudo-lager.

In their online store, this place:

Brewcraft Ltd

claims to carry Safbrew T58 which would probably be the best dry yeast variety to try brewing a Trappist ale with.

You're probably better served culturing up the dregs of a bottle of a commercial trappist or Belgian beer, if you can.

Yes, US-05 and WLP001 are drier, more highly attenuating than US-04, with fewer esters and fruitiness at mid 60s temps.

How cold does it get outside in the winter in NZ? Maybe you can lager outside in a shed or something.

Another option would be to brew a lager recipe, but use a Kolsch yeast and try to keep it on the cool side. I've had this recommended to me in the past for sort-of-lager-like beers.

During June and July I should be able to do some under the house. Should get down to 15C at least. Getting my Helles and Pilsner recipes calculated so Im ready to go for the couple of months tops that I get to lager outside :D

Ill be in touch with them about the T58, that sort of stuff is like gold dust around here. Not sure of my choices regarding culturing a belgian but it shouldnt be too hard to find one somewhere, might just need a little reviving if you know what i mean.
