The kit suggests Safale 04. I have that harvested along with WYeast 1098. Which one do you think would be better with this kit?
 
Both are good choices. Do you have a preference?

Dry yeast is often easier just add dry or rehydrate vs smack your wyeast starter a few hours before pitching.

Also, your starting gravity.... what is it ? Over 1.040 you should make a starter with the smack pack. If you go dry all you need is additional yeast packs.

NB recommends S-04 or WLP013. Using WY 1098 might dry out the beer a little to much, changing the balance of malt and hops.
 
I have been on a S-04 kick lately. I like the good yeast compaction at the bottom of the fermentor too. Makes for a good clean beer.
 
I have both 1098 and 04 harvested so I'd make a starter with either yeast. So, the "work" is the same for both, however, I don't consider making a starter any real "work." It's simply a 20-minute task.
 
I was just about to order this kit and was wondering the same. The NB kit doesn't even recommend a Wyeast yeast in the drop down menu just White Labs and dry...so which Wyeast should be used?

No. Just hydrate it in a clean sanitized dish with boiled and cooled water to proof it.
 
Yeah, if I had it DRY, I wouldn't make the stater, but my 04 is harvested, so I always make a starter with harvested yeast.
 
I use 04. Yesterday I did a winter brew and used it dry. it started going to town in under 5hrs. and as others have said, they clean up after themselves quite well and not as dry as 1098. Good luck.
