ok so built my fermentation chamber and made my first pilsner. OG 1.049 using wyeast 2124 been in primary for 5 days at 50F took a gravity reading today and it was 1.019 from reading some comments online they say you should start the rest at 1.020 but their also saying this after its been in primary for 10 to 14 days mine has only been 5 should i do the rest now or wait a few more days?
 
Id raise it up personally. 49 means you should finish around 10. So youre 30 points in to a 40 pt drop, 75%. Let them finish warm before they start getting lazy and sleepy.
 
Like already said, I'd go ahead and do the d-rest now since you know the gravity. For subsequent lagers....I've done both d-rest at 80% fermented and just doing it on day 8-10, and I don't see any difference in outcomes. So now I just do it on days 8-10, out of convenience and not having to open the fermentor. But it's your brewing journey.
 
Thanks I just upped the temp gonna bring it up 5 at a time over a couple hrs
