Ive been quite unhappy with my whiskey additions to my stouts as it always have turned out very mild even tho Ive increased the amount. Now im afraid of overdoing it with my next brew which is a rum stout. I have always added the booze to secondary but i have come across and idea from another forum that you could add it at bottling bucket and taste it to get the amount perfect.
Has anyone any experience on adding it so late and would that be a bad idea?
