When should I say its done?

Right now my mead is bubbling every 7ish minutes. What is the amount of time I should watch it to see if it's done? Is there a better method to eeing if it's done bubbling other than watching it?
 
Gravity readings. When the gravity stays the same over the course of a couple weeks, it's done fermenting. If the gravity is still high but not dropping, it means the batch is stuck and needs some love.

Then when it's done fermenting you need to age and clear the mead before bottling (or you'll have a ton of sediment in bottles).
