When can I bottle?

I'm new at this, in fact I just racked my first batch to the secondary car boy. It is an Imperial Stout, which sounds now like a big first step but what the hell, right? Anyway, I was planning on letting is sit in there for about 2 to 3 weeks before bottling. Is this enough time, or should I wait a bit longer?

Check for a stable (same reading over 3 days) Final Gravity with a hydrometer before bottling or you'll have bottle bombs
