So I'm brewing a pretty standard American wheat tonight but using a nice blend of NZ hops and lemon/lime zest to have a nice summer porch sipper. I really don't want banana or clove in this as I want the hops to shine. The first choice would be WLP320. My cooler is 62 right now which is perfect for a 65-66 fermentation temp. I guessing that would hold back the esters of 320. At the same time, I am thinking why risk it? Just use 001 and while it won't be to style, it will be more neutral.
Never used 320 so any recommendations are welcome. Swinging by my LHBS on the way home and they are stocked with almost the complete line up of WL
