I just looked through all my notes and the lowest FG I've had on an IPA is 1.012 with the majority being 1.014 and 1.015. I've read that some like them as dry as 1.008...anyway, where do you like yours?
1.014 or 1.015 is where i like it. lower and its too dry and higher its too sweet.
the last IPA i made finished at 1.01 and its good but a few gravity points higher and it would have been perfect. I mashed lower than i wanted to so that's the reason for my low FG.
It seems to me the dryer the beer the more the hop aroma pops. I've recently taken to using around 5% corn sugar to lower my gravities and always use a Chico strain for my IPAs and IIPAs.
I prefer IPAs from 1.009 to 1.012 (Depending on OG). I find that much higher than 1.012 can result in a bit too much sweetness in the finished beer. Lower than 1.009 seems to be a bit thin, and the bitterness can seem a little harsh.
As low as possible. Sweetness cuts hops IMO. Conan (my favorite IPA yeast, the heady topper strain) is an exception as it can finish high and still not taste sweet.
I'll generally mash an IPA low (147-149), and often long (90 min), and usually use very little crystal malt. Maybe some C15L or C20L, or Caravienne. I may use Vienna and/or Munich (and/or rye... I like rye) for character, but I don't get much from caramelized malts.
Unfortunately, I almost never check FG--especially when using such a proven yeast as US-05 that I'm familiar with. So I'm not sure what FG I regularly attain.
