what's the gravity of water?

I've been struggling with a batch of beer cause gravity has been 1.021 for 3 weeks.... I just said **** it and raked it to a keg tonight and the gravity was still 1.021!!! Now im all some and cleaning up and I filled my gravity test tube with water and it is reading 1.005???

Should be 1.000. Did you spin your hydrometer to remove any surface bubbles?

The gravity of distilled water is 1.000 at the temperature the hydrometer was calibrated for. Water with higher mineral content can read differently. More likely that you differences caused by temperature, though.

It wasn't water it was my star-san solution! I check my tap water at room temp and it was 1.000

I've had 2 beers within the last 3 months that were stuck at 1.020 two weeks after fermentation began. I believe I narrowed down what cause the stuck fermentations, but I will not go into that now. I was able to get the yeast working again by adding yeast energizer and shaking the fermenter for a few minutes to get the yeast stirred back up.
