Hi. I'm just starting the Homebrew scene and I have a question on what I want to brew would be legally defined as, and what sections I'd look under.

The first is what I call a Malc. It's basically fluids that are broken down and pre-fertilized in a microwave. Skimmed to remove the organic plastic that forms at the top, strained. Then adding yeast.

Second is fermented coffee.

What would those be labeled as? I mean Malc technically could be considered a wine since it has juices, but it also has soda, tea, and milk. But I don't know if fermented coffee is legal to brew, or what it'd be counted as in homebrewing.
 
Personally I wouldn't drink anything that produces plastic lol. Have you googled stuff? I don't think any of this qualifies as beer tbh so maybe this isn't the right forum, but there are people who know just about everything on here. Good luck

Edit: So I googled fermented coffee. Seems to be relatively new. Scientists used this method: The scientists first collected [used coffee grounds] from a Portuguese coffee roasting company and dried it. Then they heated the powder in water at 163°C for 45 minutes, separated out the liquid, and added sugar. Next, the team mixed in yeast cells, let the concoction ferment, and concentrated the sample to get a higher alcohol content. (A similar process is used to produce other distilled beverages such as whiskey and rum from wheat and molasses.) And voilà! Used coffee grounds produced a new alcoholic beverage with 40% ethanol.

there is no classification for this stuff. It's it's own niche thing. Yes it's all legal. Once you start selling it for profit that's when it becomes illegal if not taxed. Making moonshine is legal too. Just not if youre selling it.

That's why you scoop, then strain. Technically the plastic is a really soft, brittle like substance that's a bi-product of the milk and citric juices. And as far as I know and have seen. I'm the only one who has ever made it. Basic set up is:

Large Drinking Glass:

Fill about 1 in. Pepsi and 1 in. Ginger Ale (or Root Beer. Although I prefer Ginger Ale).

About 1 in. Sweet Tea.

Halfway point of the glass is added milk (1 or 2 %).

One in. from the top is filled with Orange Juice. With half a cap / splash of lemon juice.

Microwave on high for 2:35. You get a porous and spongy material that floats to the top. With a few particulates in there (I've been drinking it on and off since I was 6. And haven't had any health complications from the particulates). To make it a real alcohol drink. Strain the rest of the particulates out through a Coffee filter, add in the yeast. And allow to ferment.
 
Maybe check the Kombucha and Fermented tea forum? I think would be closer than anything you'll find on the beer forums.
 
Sounds like hooch to me. How does this drink even come about? Someone wakes up in the middle of the night, opens the fridge door, wonders what to drink and then decides... EVERYTHING! and all in the same cup!! AND I should microwave it, because reasons!!!

Then, the next morning, as if that escapade wasn't enough, they think to themselves: I must now ferment this with BREAD YEAST!

Sorry. Maybe it's great stuff. I dunno. It's not beer though.

This drink sounds... interesting...

It is ^_^. One of my favorite things to make late at night as a pre-adolescent. Although it was mostly dumb luck and boredom that got me to ferment it, and it not be dangerous.

Still give it a go, and let me know what you think.

Actually the non-fermented version. I was 6, bored and wondered what'd happen if I mixed stuff in the fridge then nuked it. It actually did wonders for whenever I got insomnia.

Then when I was 13 (17 yrs ago XD.). I was reading up on alcohol, and I thought "Why not? *shrugs*" And got as much of the particulates out as possible and added yeast to the bottom of a soda bottle I was going to store it in.

Took it to school the next day (in a white plastic sports bottle), and my peers loved it. Surprisingly it lasted most of the school year while in my locker. Although it did get really mellow and watered down tasting after a few weeks.
