I'm planning my second brew. This is going to be an aged Holiday brew. Looking at a OG 1.066. What type of yeast should I get ? I used Wyeast Activator for my first and it worked great.
It all depends. What style of beer is it (besides holiday), and what effect (if any) do you want to get out of the yeast? Do you want it dry, earthy, clean, citrusy.....???
