What type of wheat to use for my beer?

Hey guys,

I am planning on making a gold-colored wheat beer. However, I was wondering what is the best type of wheat for wheat beers? What do you all recommend from prior experience making wheat beers?

I've got a pretty nice caramel wit that uses 50% - 2 row, 35% white wheat, 5% caramel 40l, 5% flaked wheat, and 5% flaked oats. This gives a color of 5.9 SRM.
I add enough Hallertauer Mittelfrueh at FWH for 8.4 ibu's, 15 for 7.6 ibus, and Saaz at 15 for an additional 7.7 ibus.
Flavor with bitter orange and/or coriander to taste and yeast of your choice.
US-05 is very clean or possibly WB-06 from Fermentis.
