I have a recipe for a chocolate trappist that calls for 8lbs of Mountmelick irish stout extract. I don't know if this is a dry or liquid extract and what to replace it with. Any suggestions or advice would be greatly appriciated.

It's liquid. Mountmelick makes dark LME, but they also make a Irish Stout no boil it, which would be hopped. So that's the issue: does the recipe require hopped or unhopped dark LME? The rest of the recipe might indicate.
 
If you want a close conversion to all-grain I'd go:

13 lbs. 2-Row
1.25 lbs. Roasted Barley
4 oz Flaked Barley
4 oz Black Patent Malt
4 oz Dark Crystal
2 oz Chocolate Malt

Then add enough Fuggles or EKG hops to get the IBUs in the 40s, since it's a higher gravity beer. Probably 3 oz, if you're doing a full boil for 6 gallons.

A few things to note, the chocolate has fats in it which will reduce head retention. Plus, it calls for a belgian yeast, which will change the flavor of the beer a lot (fruity/clove belgian esters). But maybe that's what you're looking for?
 
just looking for something strong and dark. this is going to be my first all grain, i let the wife pick, and she went with the chocolate and coffee one go fig. i'm up for it though sounds interesting enough

Man you good, just ran it through for a check and 3oz fuggles in a 6 gal boil gets me right at 42 IBUs
