I have 3 oz of Amarillo hops that I want to use for a summer beer, may be my last "warm weather" brew before I start switching towards getting fall/winter beers going. Since getting the hops I've read they range from orange/tangerine to grapefruit in taste, not bitter grapefruit like Cascade though. I'm hoping to get more of the orange taste/aroma than grapefruit. I would also like to stay away from Cascade as it's not a hop I care for now that I can identify it.

I'm not a hophead but wouldn't mind doing an APA or IPA that isn't tongue ripping. I already have a Belgian Blonde, Saison and American Wheat for Spring/Summer drinking so something outside of those styles would be preferred too. I like Lagunitas Little Sumpin Sumpin Ale, but something a little more sessionable would be good. Sam Adams Summer Ale would be ok, don't want a clone though. And, I do understand that both of those are wheat beers, and I said I already have one and want something different. Widmer's Drifter Ale is another commercial example of what's in the direction I'm thinking.

I currently have the following yeasts that I could use as well, I'm not opposed to buying a different strain if someone has a good recipe though. I have WLP002, WLP566, WY3522, and harvested Ommegang. I'm not sure how good the Ommegang is, it's been in the fridge for about 7 months or so, I've been thinking of dumping it.

Any ideas are welcome, hoping to possibly brew this coming weekend.

Meant for this to go into the recipe forum. If it could be moved that would be great, I think it's a better fit there.

8 lbs of Maris, 8-10 oz of c60, enough Amarillo to get 30 IBU at 60 minutes and then use the rest from 10 minutes to flame out, save two oz for dry hop and use a clean yeast fermented low to mid range, just a quick thought off the top of my head:)

What about a SMaSH Pale Ale? That could be fun. Maybe some Golden Promise or Maris Otter for the malt. I'd do something around 4-5%, and keep the IBU:OG ratio around 1:1. Save an ounce for dry hopping.

Personally, I'd say use a cheaper hop maybe .3oz or so at 60min, then add in 1.5oz of Amarillo at 20min, and another 1.5oz in at 5minutes.

Dryhop with 2oz of Citra and enjoy.

That recipe looks good. Many say that grapefruit comes across a lot which I would prefer to avoid. Is that coming more from the Simco or the Amarillo. I can of course ask in that forum too.

Amarillo is definitely a citrusy hop, so you're going to get some grapefruit regardless. However, it does tend more towards the orange/lemon than the grapefruit side, but it's still present. Just not as much as something like citra.

Ok, that's kind of what I've been looking for. I know everybody's taste is different and some may perceive more orange and some more get more grapefruit. I just didn't want it to be as strong as Cascade, to me that gives off a lot of grapefruit, especially the bitter aspect of it.

If you don't like too bitter go with an American Amber ale style and dry hop with 1-1.5oz of the Amarillo. You could always pair it with a more floral/earthy hop like Willamette or Something similar to tone down the "grapefruit"
