I got a 6 gallon glass carboy and a 5 gallon better bottle. What should I use for my lager batch which is 5 gallons? I've heard its not good to have headspace for lagering for an extended period but I also heard plastic is not good for an extended period of time.
 
i would use the glass carboy and fill the head space with CO2. you can either use gas from a CO2 tank used for keging or some dry ice fog. i use the dry ice fog myself. you can do a yahoo local search to find a local distributor. get a 1lb. block and break it up into small chunks. then get the siphon going and put a chunk of the dry ice in a glass of warm water. pour the fog and only the fog into the carboy as the siphon does its thing. you will probably have to get more warm water or a new chunk of dry ice at some point. when the siphon is finished get a fresh chunk and warm water then flood the head space with the fog at the exact same time cap the carboy. this will trap the CO2 in the carboy.
 
Then get some empty soda bottles and fill them up with warm water. Drop several chunks of extra dry ice in, cap, and throw. Good times right there.
