What should I brew next?

For my first brew I went with AHS chocolate stout because it sounded good and the guy who helped me at Austin home brew said it'd be fine for a first brew. I'm happy with my choice. I didn't know it'd be about 9 weeks till I could drink (thought I'd be a month) which is fine but I might have gone with something else if I had realized.

Also the temperature in my house shifts pretty dramatically(50-70) day to night because I have to conserve money on my heating and cooling.

Any recommendations? I'll probably run down to Austin home brew if anyone has specific recommendations from there. Thanks guys!
 
Want an easy one? Smoked Wheat

3LBS Pilsner Malt (use briess or other high quality extract)
3LBS Wheat Malt Extract
4LBS Rauch Malt...

Use New Zealand hops for bittering and Aroma...forget the dry hop. Smoked Hoppy Wheat...It's delicious and drinks out of the bottle in just three weeks. Slight haze but so delicious.

That dose sounds good! What variety and quantity of hops would you add? I'm supper noob.
 
AHS has some good session beers if you want something quick. They finish fast and are ready to drink as soon as they are carbed. The Scottish session was a hit with everyone I gave it too; I also liked the Atlantic Palisades.

I am pretty jealous of you though- living within driving distance of such a great homebrew store.

OoooH thats what those are lol! and at 26$ a batch that's .50$ a beer! Done in three weeks I'd have to go dumpster diving for more beer bottles.
 
This was the second brew I did and it was easy and amazing.

American IPA
9# pale malt extract
1/2 # 40L crystal
1/2# carapils
1/2#victory malt
1 1/2 oz Chinook (10.5%) 60 min
1/2 oz Chinook 10 min
Ferment with Wyeast Headwater strain
Dry hop in fermenter with 1oz Cascade
Headwaters Ale Wyeast ACT1000 - 4.25 oz.
Use a blowoff!!
