just a forum to see the different varieties people use! I wanna hear some of the weird ones you use as well! This is not a forum to debate which is best, I just wanna get a list going! As always, pictures are always welcome

D47 & S04 for moi [emoji111](will try Cotes next fall)

Looking for a summer/warmer weather variety -- list is down to belle abbaye...belle saison or one of the Kveiks [emoji57]
 
have tried several; but most of the time I am using Notty ale yeast or Safcider. Just started a batch with Mangrove Jack's M02 cider yeast. Can't wait to taste how it turns out.

One of the best summer ones I have used is actually San Diego superyeast! It gives it that clean kind of summer ale taste that is refreshing

Two things I like in my yeasts - good cold crasher & highly flocculate. How's that one do with those?
 
My best dry yeast so far has been SO4... reasonably quick ferment and finished at 1.002. Compact lees with just a touch of sweetness to offset the dry tart result you get at 1.000 or lower.

Last year's results with WLP773 liquid yeast were good but it took forever and is hard to get here in Oz. Currently I have WLP775 and WLP002 in progress. They have both fermented very fast and are down to just over 1.000... no discernable difference in taste which at this stage seems to be very good but I don't know yet if they will continue to 1.000.
 
For low ABV : Imperial - A09 Pub (fast turnaround)
For high ABV : Lalvin - EC-1118 (long term commitment)
 
S-04 or Safcider. I use 71b-1122 for cyzer but have used it for fruit ciders (Cider with berry fruit added). I used to use Brewers Best Cider House Select when I could find it.

I’ve used Belle Saison in early Fall or late Spring but never in the heat of Summer. Kinda hard to get juice here then.
 
FWIW and some 90 gallons in, I use: (Note I like a dry cider, and all my batches are the same with tannins, a bit of acid, nutes and pectinase. Only differences are seasonal temperatures. All sit in primary for a month, secondary for 2 months and as long in bottle as I can stand it)

EC-1118 - Dry, matures well and wants time. Co-favorite yeast.

SO-4 - Dry, seems to produce a bit more acidic cider than 1118, wants cooler temperatures, wants time to mature. Co-favorite yeast.

71-B - Co-equal to SO-4 if temps are cool. Good yeast for my purposes.

Cote des blancs - Just transferred my first 7 gal to secondary. It seems to (as advertised) leave floral notes...may be a bit flowery for my tastes, we will see.
