So this is a RIS that has been in primary for two weeks it reached gravity and fully attenuated. I racked to a secondary to start oak aging with american oak cubes that had soaked in bourbon for two weeks.
The brew developed Acetaldehyde so I was just going to watch it and see if it would age out or if I we need to cold crash it. But today when I went to check on it it looked it had the start to infection. Just these few small bubbles, but they looked like they had a membrane or coating on them. If it is infected can I just let it sour out and have a good sour beer eventually?
