I'm currently working on a sweet mead, and it took off Much faster and more vigorously than I thought it would. It is Currently at 14.9% abv, and the stated abv tolerance of the yeast is 14%. I will either sorbate it, or cold crash and rack it to get the last of the remaining yeast out of it, but then what is a good FG for a sweet mead, but not overly sweet? 1.006-008 or something around there?
