What if I took yeast and mixed it with coke?

If I mixed yeast with coke, would I end up with a sort of, natural rum & coke?

You'd get a nasty tasting mess that would not be worth drinking. All the sweetness would be gone and there would be no balance.

Depending on what the s.g. is of coke (you could always add more sugar), it seems like you'd get coke wine.
Are you thinking of trying it?

I've had diet Coke where the aspartame broke down. I'd expect fermented Coke to be as bad or worst.

Rum comes from molasses, not high-fructose corn syrup.

Yeast can survive a surprisingly low pH, but there are some phosphates and stuff in Coke that might kill 'em off. Regardless, I don't think I'll be trying the Coke wine experiment.
