What I did for beer today

Heating the strike water for my " trois orges" Saison.

Pilsner, wheat and rye malt, a touch of CaraRed and torrified wheat. 25 IBU of leftover BRU-1 cryo, with a middling hopstand and a 2oz dry hop, fermented with Belle Saison.

Not beer, but I finally used about 1.5 gallons of home grown lemon juice in a hard lemonade. Also kegged 5 gallons of ginger cider that's been sitting a while.

Dry-hopped two batches/four carboys. No big whoop

Then (OT) subjected myself to the hottest day of 2024 to see if I could manage the rototiller in the veggie garden (I could) and then turn a couple of inches in between the foundation plantings (pita but got that done, too). Managed not to tear anything up that's still healing - A Good Thing

Sniffed the Pear-Agave Cider. It's a little egg-farty, but that could be a couple things. I used a new wine yeast for this batch, so maybe it sulfurs up naturally. Or, and I realized this after I was worried the lag time might be too long, I didn't look at the ingredients for the FAJC (it was just hanging out in the freezer unused) I threw in and there may have been preservatives or something that has stressed the yeast.

Either way, it's ripping along and I may add some extra sugars in form of more Pear or Prickly Pear juices. Note to self, buy organic, JackA$$!

That can be fixed if it doesn’t dissipate on its own. Sounds delicious.

Fermentation of my three grain Saison is well underway so started getting some heat on it, ramping up to 26°C over the next 2 days. Always forget what a monster Belle can be in early fermentation, glad I'm using the all-rounder with a good 10L of headspace.

Cleaned out my kicked British IPA keg and CO2 purged my other spare at the same time so I'm all ready to transfer the Saison when it's chewed down to 1.008 or thereabouts.

Gotta say having done mostly big IPAs recently it was very refreshing to do a brew with a 1.055 OG using the smaller malt pipe and with no need for the boiler extension. Certainly makes removing the grain basket for sparging a lot easier. And despite the grain bill being 35% wheat and rye, no difficulties in mash or sparge and slightly overshot my targets.

I did two important things today. I posted a notice about our upcoming brew day and Maibock quality control.
All beers on tap are bottled for quality control for taste tests over a few months to make sure my process has not changed.

Then, rather than deal immediately with the crusties, put a couple gallons of glass-temp water and a tablespoon of OxyFree in each carboy and inverted them on their bungs...

I'll let them sit for a couple of hours then give them a good scrubbing...

Yesterday made up a batch of mead as the last one is going fast. Today brewing another batch of blond on kveik as the last one is also almost gone. First time in quite a while that there is three weeks between brewdays. Life is seriously getting in the way. Also for some reason (could be the absolute sh*tshow that is my garage) haven't been feeling the brewing vibe. Going to a wake later today, and a late comedy show tonight, so this one will get no-chill.

Why would you add Campden to boil? You dont do that. Do you mean Whirlfloc or Irish Moss? If so, Wheats don't get any clarifier. Cloudy is the specialty of the day for them. I'm confused over the Campden thing.

Yes i use city water, adjusted my water, but forgot the campden for the chlorine removal. I was trying to get a brew in while getting a bunch of other stuff done around the yard. Maybe it wasn't the best Idea!!

Today I transferred my Old Hooky best bitter to my 19 litres Corny Keg. It finished at 1.012 giving the beer an ABV 4.5% bang on the real stuff.

Tasted the Pear-Agave Cider. Need to get that cold-crashed and the DIPA into a keg. But today is fix things in the house day (bike tires, electrical sockets, etc.).

I tasted my Kiwifornia Common this weekend (both versions, with and without ginger) and I'm especially happy with the plus ginger result. To be honest with myself: I'm glad I dryhopped this experimental version of a California common, otherwise it's a bit too bland. I had no biscuit malt, when I made this (and not the time to make one), and I see this flavour now missing, compared to the last time I made one.

I started experimenting with ginger brews again recently, as I found the Monteith's Summer Ale clone recipe. And now that I know a good amount of ginger I have to add, the next steps are about the malts and hops (and the hint of rata honey). And also will try the original clone version with orange zest, of course.

Then I bottled my small batch Cold Brew Wai-iti Lager today, let's see how this will turn out after a few weeks of maturing. 15x
