Brewed up a Belgian Dubbel. Now it’s up to the yeast to do their thang.

Replaced the o-rings in a keg and kegged the Cream Ale I brewed a couple of weeks ago. Then I rearranged everything in the kegerator to make room for the keg. I have a 3 tap kegerator which has room for a 4th keg to carb/condition as long as I keep the jars of yeast slurry in some semblance of order.
 
Brewed a Belgian Dubbel today. Had to fudge some of my grain choices, so a little bit of chocolate malt, aromatic and biscuit finding their way in instead of Melanoidin, Carafe and CaraMunich.

On a whim I also swapped up my hopping regime and dropped 50g of Opus/CF182 into the whirlpool. I've really liked the gentle orange/floral flavour profile this has brought in other beers I've done and feel it might play well with the dried fruit/raisins/nuttiness I'm hoping to get from the rest of the grain bill.

A pack each of Mangrove Jack Belgian Abbey and Belgian Tripel and into the fermenter.

I also added another 300g of clear candi syrup to my Brett Belgian pale. This has gone in a month from smelling faintly of Marmite to intensely tropical which is quite surprising. It was pretty dry when it went in the keg (1.006) so I'm hoping the extra sugar will give the Brett something to get to work on over the next couple if months.
 
I have used Midwest & Northern for over 15 years. I have seen some alarming changes & not just with the onset of COVID. I have not dumped them. I can’t wait 2-3 weeks for a shipment or even a response without using an alternate. My point here is that they need to re-evaluate and reinstate their customer service to what it once was. You are correct, & I agree, “To each his own”.
Got a notice from UPS, my order is arriving tomorrow 24th. So 9 days in all, not a bad deal. I'm used to an average of 10-14 days for most out of state orders so not bad.
 
Been busy with work so not much done for beer lately. This morning started the gradual crash of last week's WF lager batch; taking it down 10° at a time over several hours, because reasons. That will sit for another week/few days/whenever until kegging, as the pipeline is fairly decent. Tomorrow will purge the kegerator of a couple of non-moving kegs (peach hefeweizen from June that isn't great, and pineapple hard seltzer that I just don't want to finish) in order to make room. Also going to try an experiment; making another batch of hard seltzer, but with no flavoring at all. Plan is to buy several of those Mio flavor things so I can have whatever flavor I want, with no sugar added.
 
Didn't do much for beer today but we damn sure attacked our keg of Marzen this afternoon, which has come into its own after a good couple weeks of lagering. Also sampled our ESB that's sitting in the conical and it's pretty tits, even without carbonation, so we expect to be absolutely crushing that one soon. Spent a little time strategizing on a Westvleteran quad clone we want to make as a Christmas beer and then possibly iterate on each successive year. But **** talking whilst day-drinking homebrew yields only a certain amount of output versus the number of ideas presented, so we'll see what we land on.
 
Not FOR beer, but the reason I started drinking about 8am today. Bathroom faucet has had a slow leak on the hot side, so husband bought a new faucet for me to install. Get all set, tools at the ready, and the hot water will not shut off completely. Valve is toast. No worries, just take it off and go get a new one! FALSE. Old pipe broke off unevenly (rusted completely through) and now I have a VERY short pipe to attach the new valve to. Got it on, with just a slow drip that I will eventually stop with my soldering iron if I can find it. Oh, and I bought the wrong valves for the under-sink hoses we have. So shortly will hie me back to My Home Sucks Depot, get a replacement hose, and say the hell with the new faucet until we can get our usual plumber out to replace the damn pipes.
 
Started a new Cream Ale with Pilsner, a splash of honey malt, bit o corn, a little rice, Azacca hops and WLP080.
Thought I'd break in my new *3* gal fermenter that's actually only 1.5 gal, so bonus, get to make another batch.
OH my nummies! This is going to be good!
Just bottled this, but pre-carb it's right on target for what I was going for.

Nothing much today, I'll likely be taking a break from brewing for a few weeks until I can kick the two (3/4 full) kegs I have on the go right now. Both of the beers I have in stages of fermenting and conditioning are slower burners. However, I still did a few bits:
  • Purged a bit of CO2 out of my Belgian Dubbel which is in the FermZilla to see if the sulphur has started to subside yet...which it has. I may have slightly overdone the chocolate malt so I think it'll be at the darker end of the spectrum but it does have a lovely red tinge even in bulk. I'll give it another week before I draw a sample off.

  • Did similar with my Brett Belgian pale. This has been secondary fermenting with some extra Candi sugar in the keg for about 6 weeks now, and has gone from smelling frankly pretty disgusting to an incredible bouquet of tropical fruit with just a hint of funkiness.

  • Ordered a few bits I need for my doppelbock, notably Carafa Special I and more Melanoidin.

  • Wrote up "Tyrannosaurus Flex", a recipe for an 11.8% triple hazy IPA with Mosaic, Sabro and Strata hot side, and Citra, Mosaic and Strata cold side. Taking into account use of Spectrum CO2 extract, it's nearly 25g/l dry hop at the moment...
 
Brewed a Vienna lager yesterday.
My fridge is full but I was anxious to brew this so I am fermenting in an Igloo cooler full of water. I've been pleasantly surprised how easy it's been to keep the temp steady in the mid-50's. I used w-34/70 instead of my normal fav WLP830 as a hedge against warmer temps, but it turns out I haven't crept above 56.
Low tech, I know ... but it does the job.

After moving from the US PNW to the desert SW, I was able to brew my first two brews this month. It’s been 15 months, so after much preparation I decided on a simple pale ale to dial the system in. First batch I missed a few minor steps and ended up 2 points low on OG. I had done a very mild boil so updated the boil off rate and brewed it again. Same result. I kept track of the boil off and my original rate of 1 gal/hr was correct. Thinking of efficiency I was recalling on the second beer, after admiring the full husks on the misted milled grains, the crush was inconsistent. Today I checked my mill and one end was .035 and the other end was wide open. Must have opened up during the move. Can’t wait to make the next batch. In the meantime we will have 10 gal of awesome 5.2% pale to work on.

Brewed a Vienna lager yesterday.
My fridge is full but I was anxious to brew this so I am fermenting in an Igloo cooler full of water. I've been pleasantly surprised how easy it's been to keep the temp steady in the mid-50's. I used w-34/70 instead of my normal fav WLP830 as a hedge against warmer temps, but it turns out I haven't crept above 56.
Low tech, I know ... but it does the job.
What size fermonster is that?
 
One of the many things I love about my job, I'm allowed to work from home when necessary. Sitting here waiting for the plumber to arrive because of a busted pipe under the bathroom sink that I cannot remove from the fitting it's stuck into. Almost never fails, when something goes wrong around here I don't have the right tool (or in this case, the brute strength) to fix it. Fortunately we have an awesome plumber that gets the job done, whom my dogs adore, and he also loves my beer. Told me last time he was here that I'm listed in their system as "that lady that makes beer". I've got a great blonde on tap that he'll enjoy. After that will get some much needed laundry done (and a shower, water has been off since yesterday), then might finally make the seltzer I intended to make a few days ago before sh*t went sideways.
 
Finally got around to brewing this British Golden Honey ale and it's about Da***d time !! Totally unprepared unscheduled but I got a wild one up me nether parts today and dang it all I'm just doing it. Shoulda had this done weeks ago for football. I'm sure I'm totally going to screw this up..already darned near forgot the rice hulls !!!! But let's see what happens. I'm brewing !!!! 1st time heating strike water with my Max Burton induction cook top. Will see how it goes. Heated up the strike water pretty fast..still, not as fast as stove top.

Yeah Baby it's on ! Just allow yourself an extra 45-60 min to reach boil temp if you have a lowly 1800 watt induction like me but it works !
