So I found this recipe (possible on this site I forget) but I don't have the malts available at the shop I'm going to. I want something awesome I can age a few months, a summer pleaser. Here it is as the recipe, here is my modifications due to availabilty and wieght, ie recipe is US and shop is in Canada so.
8lbs Pale LME (1/2 late addition)
2lbs Clover Honey (at high krausen)
1.5lbs Crystal 10L
1.5lbs Belgain Special B
1lb Flaked Rye
1oz Cluster 60min
1oz Cluster 30min
1oz Cascade 30min
1oz Cascade 15min
White Labs Irish Ale Yeast
My version with whats available and trying to imitate special B
8.8lbs - 4L
2lbs Clover Honey (at high krausen)
1.1lb CaraHell 15L 500g
1.1lb Caraboheimian L80
0.5lb melanoidin malt
0.5lb rye malt
0.5lb rye flakes if i can find em at bulk barn
0.85oz Cluster 60min
0.85oz Cluster 30min
0.85oz Cascade 30min
0.85oz Cascade 15min
White Labs Irish Ale Yeast
Any advice? Or looking good...
I'm shopping at Brew Time in Hamilton, they have limited selection on grains but a good price on extract, if any one knows whats around the area would appreciate it I will be visiting in a few weeks
 
I haven't been on this site in many years, but glad to see my oldest recipe is still relevant.
I have since converted to all grain, and I rarely see Special B anymore, but this is still a neighborhood favorite.

Welcome back. That recipe looks nice. Can you post your all grain version?

I can find Special B online and it is one I use frequently. I can't describe the flavor it imparts but it has been used in many of my best beers.

I have a couple of pounds, maybe it is time for a recipe using some.
