Made the hot sauce. Tried to add xanthan gum with emersion blender and it clumped, arghh. Jalopeno sauce with big jalopenos. Not very hot but tangy and nice. Tried to strain it and now still little white pieces? I'm not going to mention it to anyone :). Great consistency though. Worried lost some flavor by straining, but end product is better I think and pours easier. Next time I will try mixing the gum with evoo first. Thoughts, welcome. Shrink wrap no problem with heat gun. This sauce is sooo good on tacos. I am really liking less spicey sauces as they seem to enhance food not over power it.

Finally made royal icing, but didnt let cookies dry enough and they crumbled? Anyone ever have this happen. Wife and friends love can frosted cookies. Made chocolate dipped pretzels. They turned out ok. Any tips?
 
More cookies and more chocolate dipped pretzels here. Frosting next!

Update, used warm can frosting, and food color. The ones we flooded white and sprinkled came out best.

Baskets are coming together, making pasta for everyone has helped my skills. I used to work a lot at once. I think its easier to do one sheet at a time, and less messy.

Made c rolls for Christmas morning. Dough made in bread machine. Rolled out, rubbed with a stick of butter, a cup of brown sugar and 3 tablespoons of saigon cinnamon. Placed them close together trying something new. Let rise plenty and then baked. As they cooled, I coated them with a full can of frosting. They are really tasty.

For Christmas eve I am going to make a copy of white manna sliders for everyone. On electric griddle, I am going to do 2oz meat and slap thin cut onions into them. Then flip the sliders so the meat cooks on the onions. Put on american cheese and bottom bun with top on it as well. Let cook in stack. Slide spatula under onions and meat and shimmy on to the top, which is removed from bottom and burger is now upside down. Flip upright and wrap in parchment paper. I am going to attempt 36 of them.

It's become a family tradition that I cook an Asian meal on Christmas Eve.

So, I wanted to start prepping tonight, since there's also tons of actual Christmas prep tomorrow.

Menu is pot stickers and spring rolls, with char siu fried rice and cashew chicken.

Char siu (chinese BBQ pork) and rice made tonight. All the veggies and sauces prepped.

Should be relatively stress free tomorrow (for cooking meal at least ;) )

I resubmitted that cake my daughter made and this time the pic seems to have gone through. Cake from the shoulders up, florist foam below. Supposed to be some character from a movie the boy likes.
Wow, she did a great job!

I have no company coming this year, so I scaled back the baking. This is a white fruit cake it is a thing my mother used to make, but I'm using more fruit and none of that artificially dyed stuff. Pinapple, apricots, tart cherries and raisins, 3 sticks of butter, pecans and no citron.

Also made ginger hazelnut shortbread cookies.
