Last night wife made something kids will love (maybe adults too). She used crescent roll dough and wrapped up pepperoni with cut chunks of string cheese and baked. Clever recipe makes a nice weekend lunch. Happy easter
 
Happy Easter!

Last night had smashburgers cooked in a smokin' hot 12" cast iron skillet, greased up good with the fat from some peppered bacon. Topped mine with bleu cheese, KOTC had sliced cheese on his. Also a little blop of mashed taters with buttah.

Tonight, just the two of us, will roast a shank-half ham, a huge sweet tater which we'll split, and steamed asparagus with Hollandaise sauce. Yum. Maybe some champagne to go with.
 
Not sure if this should go in this thread, the bread thread, or the smoking meat thread but...

Traditional Easter dinner of BBQ pork shoulder. Sous chef is prepping the green play dough appetizers. Also have some brioche buns proofing for sandwiches. And some Carolina style BBQ sauce.

Nothing in the fridge for lunch today, but I noticed most of a ham steak in the meat drawer. So I threw some pinto beans in the crock pot with some chicken flavoring and chopped up the ham to go in there too. I might portion some of the beans out to go into Baked Beans. The family doesn't appreciate "beans" as I call them. They like sweetened baked beans though. I have some maple syrup I can add in there and some brown sugar and onions.
 
I'm an idiot so no pictures... but last nights dinner. Beer braised chicken tacos (shredded chicken, jalapenos, modelo, roasted salsa verde, onion, coriander, cumin, topped with a local businesses smoked tequila hot sauce) with brown rice/beans and grilled bananas.
 
Guy just brought in a burger press I ordered through his kid's fundraiser. Tonight is going to be stuffed burgers of some kind. I am tempted to make my own burger instead of buying it preground.

MMMMM, love some stuffed burgers! Faves - shredded pepperjack and diced Ortega chiles. Cooked bacon bits and sharp cheddar. Feta and minced pepperoncini. (That one is particularly good with ground lamb.) Minced caramelized onions and Havarti.

Thing I found was don't stuff TOO much in there or the burger doesn't want to stay sealed - pinch the edges together really well, then flatten the patty out a bit. Grill or sear on a really hot cast iron skilled or griddle.

We always grind the meat at home - love brisket or tri-tip cuz there is enough fat to keep it moist. We ground up 18 pounds of brisket a few weeks back, package it in 1 pound sandwich baggies, flatten, put four of those into a gallon ziploc freezer bag and freeze. When you want burgers, just yank out however many pounds you need!
