Tonight's repast same as last night's - refried beans with cheese, the last of that sprouted rice/quinoa mix, carnitas, salsa, sliced avocado with garden-picked lime and sea salt, black olives, homemade tortilla chips, homebrewed beer.
 
Worked on jeep last night, so the wife decided to cook dinner. She made NY Strip steaks for them in the cast iron pan, and salmon steaks in the non-stick pan for me.

I shared some salmon with my oldest. I did not receive any NY Strip in return. WTH? I thought it was in plied that WE were sharing!

Meh. Wife cooked them so they were probably overdone anyway.
 
Poke (Hawaiian raw fish salad, pronounced by locals as "paw-key") - sashimi-grade tuna, wakame (sea weed), shallots (God! I miss the REAL Maui onions), tomatoes and spring onions - seasoned with a concoction of lime juice, soy sauce, sesame oil and a bit of mirin (Japanese cooking wine).

I love poke salad (and around here, it's pronounced "poe-key" - go figure regional differences!) - the local Safeway store sells it in two versions, shoyu and wasabe. Both are really good! Yours looks excellent!

Fish tacos. Down and dirty.

Tilapia fillets with panko breading fan fried in a little vegetable oil, bagged dry coke slaw blend, Chipotle dressing, chopped scallions on a warmed tortilla. Not fancy, pretty much a Sandra Lee style recipe (straight from the grocery store to the dish) but damn tasty.

KOTC would love that - raw salmon is his favorite kind of sashimi/sushi.

I am also a big sucker for salmon; on a weekly basis, we get a pound of salmon fillet, remove the skin and spread a generous amount of salt on both sides of it.

After a couple of days, the salmon is cured, gets chopped into 1/2" pieces. It goes great with rice congee, served with soy vinegar-infused ginger & finely chopped scallions.

One of my favorite breakfast items :mug: :ban:
 
Last night was Chicken Stir Fry. I just googled a few recipes and then threw a bunch of stuff together off the top of my head. Everyone seemed to like it. Nice change from the usual Teriyaki my wife makes. Also tried Udon Noodles for the first time. They were really good. I might start eating them as a regular side dish for lots of things! Also tried rice noodles that were in the cupboard for a long time. Not as good. Shaped like noodles, but tasted like rice.
 
Pretty stoked about my first attempt at making a fritata. Ham, taters, and cheddah! Came out great.


I have 16 chickens so lotsa eggs. Frittatas are one of the best things ever .You can add almost any leftover or not leftover meat ,cheese or vegetable and with some toast feed four people for 2 bucks; not to mention they are defrickinlicious. Good job.:rockin:
 
This is happening.

Butterflied flank steak stuffed with roasted red peppers, fresh spinach and mozzarella cheese. Seasoned with salt, pepper and garlic.

Can't wait for eaten pics. That's some culinary skillz. Something I think I'll try (after hearing results :) ) I would have liked to see a pic of it before it was rolled up.

Your twine skills might have some room for improvement. Two knots, and cinch it tight like this. Works for any size roast. Looks cool, too. I trim and tie tenderloin roasts this way.

Super fail last night making homemade sausage/cheese ravioli. They fell apart in the pot - I forgot to use egg wash when I sandwiched the raviolis - had it sitting right there and just forgot. I ate the slop anyway, and it was tasty.

Pics of the pre-fail. No abortion pics. Imagine the stuff below, sploded all over a plate, with some nice tomato/mushroom/basil sauce on it.

In the first pic you can barely see a bowl with eggs and a pink brush. That never got used. Woopsy.
