Had to make this pork butt. Was previously frozen, defrosted and had to cook tonight. Rubbed it with salt and pepper and put it in convection oven at 425. It is searing away and looks juicy. 180 in one hour thinking about applying sugar but will wait. You can see hole where I put probe in. I tried to trim it as well. Snack on fresh ciabatta rolls with mayo and sriracha later. Tacos? Idk?

The other night crockpoted home garden roasted chillis, tomatoes and a store bought pork rear end. Shat. No roux, not enough chillis, salt, etc...tonight made roux and thickened through boiling, added salt, much better. Its good, i want to put in breakfast burritos
