Lablabi. Comfort food to the max. I'm of Tunisian decent, and it's a chickpea soup, in an extremely flavorful garlic and cumin broth, garnished with pita croutons, capers, and roasted almonds. I make it once a week :)

That looks really good but I am a sucker for legumes, I'm not unknown from munching on chickpeas straight from a can.
I made fajitas last night using Alton Brown's method for the skirt steaks, came out so good! I'm sure that it was organic grass fed beef didn't hurt ether.
Served with tostones , rice and beans and some good HBs.
Pictures didn't happen but this will be repeated, mmm ,lunch tomorrow;)

Do you mean putting the steak directly onto the coals? I always wanted to try that then I went vegan :eek:

Exactly, used real charcoal, one minute per side, wrapped it and rest while I finished the veggies, rare and melt in your mouth tender! It will make you rethink killing those defenseless vegetable:D

That chick pea soup looks divine. Need a recipe here right now sir.

For sure.

1 lb dry chickpeas (soaked overnight)
8 garlic cloves
1 large white onion
2 carrots
1 cup parsley
2 tsp ground cumin
1/2 tsp coriander
1/2 tsp crushed red pepper flake
1/4 tsp cayenne pepper
1 tsp turmeric
Salt & pepper to taste

Boil chickpeas with 6 cloves of garlic until tender.

Do a small dice on onion, carrots, and garlic. Sweat in a separate pan.
Once chickpeas are tender, remove whole garlic cloves, and add sautéed veggies, and all the spices. Simmer for 45 minutes, add chopped parsley.

Serve, traditional garnish is really varied, it can be anything from fried eggs, baguette chunks, capers, almonds, etc etc.

I like almonds and capers with some toasted pita
 
Passed, that food looks & sounds awesome; except for the pimento. I've hated pimento since I was a kid, but that just means more those who like pimento. I'm going to have to try making this chicken marsala sometime. BTW, is that a rubber duckie next to your S&P shakers?

My son scraped the pimentos out of his beans too. I mostly added them for color.

That is a stuffed chick. It's some sort of Easter decoration. My wife has been lazy and hasn't put away that stuff yet.

I could never be vegan but this looks amazing.
 
Not much cooking for the last month or so, nor for the next few months, as we get ready to move outside in July. Much of the cookware is boxed, keeping it real simple here at our house. We had a big moving sale this past weekend and my Niece provided the meals, mostly Subway, Carl's Jr. and Pizza.
 
I made a bunch of them last wkend. I use lil smokies in mine, how about you?

Lil smokies & cream cheese are usually my go-to ABT stuffing. I've also made them with Boudin sausage & cream cheese, shredded turkey & cream cheese, and fried catfish.

Edit: oh yeah and once after a hunting trip I stuffed some with dove... and cream cheese.

Made my own quicky version tonight, canned chickpeas and homemade chicken stock, delicious, thanks for the inspiration!

I've used Smokies in my ABTs and my favorite way to cook them is on the smoker. I like trying different Cream Cheese flavors too.

Another similar item is to take one of them sausage dogs and wrap it in bacon and cook like an ABT and then put it in a bun with some jalapeno cream cheese instead of mustard. Chop up some jalapeno real fine and mix it, and some juice, into some cream cheese. I tried stuffing the dogs with cream cheese and it didn't work very well. Spreading on top was much easier.

This just went onto my must-do list. But I hope you'll excuse me if I'll rename them....

Reminds me of the Indian chief who called his tribe together and told them, "I have bad news, and good news. The bad news is, the hunting has been lousy this summer and we're gonna have to live on buffalo chips all winter.

"The good news is, we have plenty of buffalo chips." :D
 
Those pictures make my mouth water! Haven't made bacon-wrapped jalapeno poppers in a while. Never tried them with the little smokies in there - might have to do that next time.

Just made a batch of sugarfree bread & butter pickles, using the small cucumbers you can buy by the bagful at Costco - rather than slice them into rounds, which would have been small, I sliced them lengthwise instead. Will do a photo tomorrow when they're done.

For dinner, panseared/ovenroasted marinated lamb sirloins with tzatziki and a big Greek salad.

Halve jalapenos, stuff with cream cheese, stick some sort of sausage in there, wrap with a slice of bacon (use toothpick to hold together), and grill or bake. A little BBQ sauce on it works too :)
