Seeing as I had a 5am breakfast and a 9am breakfast and then went to a cookout, I opted for a light dinner of Thai spring rolls. I'll concede that I'm not a roller of particularly pretty spring rolls (would be a lot easier if the skins weren't cracked and torn) but they taste fine.
Everything looks so good! Hubby and I were in a parade today and they had hot dogs and burgers afterwards. So I broke tradition and prepared chicken tacos. And grilled sweet corn on the side.
Made a keto pizza Monday night. Aside from the fact that there isn't a perfect substitute for a chewy yeasty pizza crust, this is a reasonable facsimile thereof! Leftovers will be served cold tonight.
^ I have been wanting to try either a chicken crust or a cottage cheese/parmesan crust. But I had the gut feeling nothing would compare to a chewy, fermented, doughy crust.
Nope. Nothing does. However, if you can't/don't eat wheat/gluten, and you keep as low carb as possible - this is an OK substitute. At least I can have all the yummy meaty cheesy toppings I like!
Summer salad greens the protein is tuna salad and hard cooked egg. I think most of the other toppings are identifiable. The homemade bread is a rosemary olive loaf which is very tasty and has an easy soft texture.
Grilled B/S chicken thigh salad with bleu cheese crumbles and little chicken skin chicharrones for crunchies. The salad had multicolor grape tomatoes, black olives, hardboiled egg, avocado dices, green onion, red cabbage, carrot shreds, and homemade balsamic vinaigrette.
It has been unpleasantly hot, so cooking hasn't been a lot of fun lately. Yesterday I caught a case of the clevers and decided to utilize some leftover roast chicken to make a triple batch of fried rice so I that wouldn't have to cook for the rest of the day. Not terribly healthy, but I did enjoy the reprieve from cooking in the worst of the heat. Being a bit of a simpleton, the inverted bowl trick never gets old for me.
Speaking of fried rice, it’s at 9 o’clock and not as beautifully plated as @Bramling Cross ’s. At 3, is a grilled chicken breast covered in a coconut curry sauce. This was a leftover meal.
Did a crab boil for 35. My wife’s family had a reunion and a few of us went on a charter fishing trip and came back w a bunch of Dungeness crabs and a few rockfish.
Some of the group are sensitive to spices so the boil had garlic, paprika and salt. We then made a dirty butter w Cajun, old bay and a touch of Franks. That butter was poured over the whole plate.
