Tonight was spaghetti with butter, olive oil, garlic, and broccolini.
Basic egg, ham and cheese breakfast sandwich on focaccia. Except with a special guest- morels, purchased at our farmers market.
Can we all agree to halt space exploration, ocean studies and environmental projects and focus all of our energy into commercially farming morel mushrooms?

We spent the weekend on an island eating seafood. Friday we found an oyster restaurant in the swamp, so we tried it out. Friday was raw oysters followed by steamed mussels. But the specialty of the house is called eglade, mussels on a board, covered in burning pine needles. He puts a pile of needles on top of the mussels, ignites them. If not completely opened, he repeats it. We went back Saturday to have this dish. Phenomenonal. 
Wow, Corky, never heard of such a thing! I'd love to try that! Boy that's a mess 'o mussels. Yum!
I cleared out the fridge and made some vegetable lo mein for lunch.

And a mess to eat.
Grilled brat with mustard on a brioche bun potato salad side.
Souse vide bb ribs finished on the grill lightly sauced, and corn.
Fresh strawberries on store bought cheesecake.

Ribs are coming off, homebrewed doppelbock is poured...
Made salmon sushi bake for dinner to use up some freezer stuff. Came out really good. Even the kiddo liked it.
I had some leftover chipolatas, thin French sausages yesterday and considered making hot dogs with a baguette, but in the end I just nuked them with leftover noodles and got back to work.
We smoked a pork shoulder today. It came out very good but took longer than expected.
Breakfast of champions. Beans, ham and sunny side up on a corn tortilla

This recipe is a great starting place and took about 30 minutes total. I subbed all but 3 ingredients (oil, garlic and chili powder) based on what I had and it still turned out great!

- 1 1/2 tablespoons canola or vegetable oil (1.5T olive oil)
- 1 medium yellow onion, diced (1/2 onion)
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 1/2 teaspoons ground cumin (1t)
- 1 cup low-sodium chicken broth, divided (3ish cups water)
- 1 1/2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces (2 cans of Kirkland chicken and water)
- Kosher salt (2T Knorr bouillon)
- Freshly ground black pepper (on table)
- 1 (15-ounce) can black beans, drained and rinsed (1 can kidney beans, rinsed)
- 1 cup frozen corn kernels (1 can corn and water)
- 1 (16-ounce) jar salsa (half jar)
- 1 cup long-grain white rice (2ish cups)
- 1/2 cup shredded sharp cheddar cheese (on table)
- 1/4 cup coarsely chopped fresh cilantro (ditched completely)
- (I also added half a yellow bell pepper and a diced stick of celery.)

That really sounds easy enough and so good. I have a "faux rice" (made of chickpeas) which I will use to keep it lower carb/glycemic impact. Thanks so much for posting the link!
There's a little business run by a bunch of young guys. Most aren't even out of high school. They go out fishing and sell at two local farms. Good go getters. They pretty much have scallops every week and a surprise like lobster, squid, porgy...
This week haddock. My plating skills blow. That's why they invented garnish. Had to chop off his legs. He's like my feet over hanging the hotel bed.

Salmon, rice and corn because I needed to use it up.
Ushering in summer the proper way. Brats simmered in a combination of HB Nut Brown Ale, and HB Imperial Stout. Then grilled. Served with fresh raspberry/cherry fruit salad, and salt and vinegar chips. Quenches my early summer itch.
Easiest dessert ever. Crème de brûlée mangos. Actually there’s no crème but the kids love it and it takes all of 30 seconds to make.
We made cheese filled ravioli with tomato sauce, garlic toast and caprese.

Steamed broccoli, beer with onion braised brat finished on the grill and mash. Vacay over.

I'm stuck on this stir fried udon with dumplings. I'm eating it at least once a week. That's orange chicken (from a bag!) so you know that's good stuff.
Hubbs big burger up top, my burger cut. Just with cheddar and ketchup, and Southwest salad from a bag.
Merry, that cut burger just literally made my mouth water. Cooked perfectly!!
