Well, it's not the weekend, and I didn't cook anything, but I'm not going to start a thread on "Big Salads", so I'm dropping this here

I didn't get a pic (I will moving forward) but I marinated some chicken breast in Italian dressing, then did a pecan coating. Paired that with roasted sweet potatoes with a ton of stuff on them that basically makes them a dessert (brown sugar, marshmallows...and butterscotch chips).
It was excellent. Used the chicken on some lavash with prosciutto and Japanese mayo and dill Havarti the next day for lunch. Also excellent.

Beef and cheese quesadilla with chips and the usual accompaniments.
We had chicken salad for dinner. I grilled boneless thighs, and my wife made a salad with lettuce, carrots, cukes, beets, cauliflower, broccoli, bell peppers, green onions and parmesan. She also made the vinaigrette dressing. Dessert is a spiced dates cake.

Made the wife a coconut tres leches cake for her birthday.
My entry for the Chopped Salad Olympics: iceberg lettuce, green and red onion, celery, carrots, baby portabellas, tuna, hard boiled egg, sharp cheddar, bacon, pecans, pickled jalapenos, homemade Italian dressing, and grated parmesan...

Camouflage. Silly salad, it was trying to hide but the bowl gave it away...
Tonight I'll be cooking curried lamb balls-ground lamb meatballs with various curries, bell peppers, onion/garlic and diced tomatoes for the sauce. I'll cook a small bowl of couscous for my wife, quinoa for myself.
Mmmmmmm curries! I need to learn to make more of them. I make a mean Butter Chicken, pork Vindaloo, and saag paneer, and my favorite is Panang Curry. If you ever feel like sharing the ones you like, Corky, I'd love to copy them off and try them!
Hubby’s veggie and cheese scramble with sausage and HM sourdough.
Nothing too exciting, just simple home cooking. Roasted chicken, mash with gravy and there was also a cabbage/kale side salad.
Merry, tell me what you like for your salad - I bought a mix of kale and cabbage and broccoli slaw, looking for good ideas!
Oh a ginger dressing or balsamic vinaigrette would be my choice on that blend. Actually, I’ve been getting bagged salads from Lidl a lot like Dole and less expensive, and each bag is enough for the both of us to have a full bowl. I used the Asian blend yesterday green and red cabbage, kale carrots and green onions. I frequently top it off with cucumber and tomato. They come with a little bag of dressing and toppings. Asian has Chinese fried noodles and sliced almonds. It’s quick and easy a decent salad for 2 and just $3, a head of cabbage is 1.69 a pound right now. So I can be lazy and save money.

I'd love to share but everything will be estimated because I don't use recipes, I use what I have on hand.

That would be just dandy with me, it's the way I cook! Never met a recipe I couldn't tweak and seldom cook one without tweaking one way or another. So, whenever you have the time/inclination fire away! And thank you in advance.
Tossed together a pork, vegetable, stir fry with pineapple over jasmine rice.

Cold and damp so we made a cream of potato soup for dinner. My wife also made homemade crescent rolls to go with it. No pics though.
I made a big ol' three pound crusty-baked meatloaf and a pan of tri-colored sprouted quinoa last night. Sorry, no pics, as usual I forgot!

Homemade sourdough bagel, one egg, one slice of crispy bacon for brunch.
Temps are warming, but, it feels like damp bone chilling weather, so I cooked up some beef stew with another bagel to mop up the gravy.
Belgian waffles with cloudberry jam and cream.

Made a big batch of Golumpki Saturday. Ran out of cabbage leaves and used some of the tougher outside ones. Best batch I’ve made. Super tender!!
Is this a graniteware roaster? They look great!

Yes that is a graniteware roaster. It lives in my oven. Ha Ha! I have to take it out eveytime I want to bake/broil. Doesn't get used to often. Just the occaisional spiral ham or large batch of Golumpki.
