Made eggplant parmigiana for dinner tonight.
My daughter makes those... so yummy.Gonna try my hand at shotgun shells tomorrow and maybe stuff some jalapeno with cream cheese and wrap in bacon for some appetizers.
Any word of wisdom for a first timer? My daughter makes those... so yummy.

She says there is not a lot of stuff to worry about, just that you should use thin sliced bacon (half strip per pepper) as thick bacon does not crisp up as well.Any word of wisdom for a first timer?
On my shotgun shells I tried Turkey bacon as my daughter is not a huge meat eater. It was too thick and too short. Going to use regular bacon and just cook up the turkey bacon for breakfast. That looks so delicious, especially since about 10 years ago I become dangerously allergic to almonds and peaches. This is another Chef John recipe. Definitely a keeper. We'll definitely be making this again.

We made pizzas with the leftover meat tonight, turned out better than I expected. And yes, a bottle of great red wine was consumed-a 2022 Chinon made by Philippe Brocourt, our favorite winemaker around here,Man, Corky, that looks delectable. A nice glass of red wine and I'd be a happy camper!

We'll be back in NM at the end of September so I'll fill my freezer with the green gold as soon as I'm back. How did you find it in oregon?Managed to source a case of Hatch chiles in Oregon. My neighborhood should thank me for creating the heavenly aroma of roasting chiles. I roasted, peeled and vac packed about 30 lbs. Should last me til at least next year.

Believe it or not, right at my neighborhood Fred Meyers. I was in there and noticed they had Hatch peppers for sale in little 2 or 3 lb bags. I asked the produce guy if they had more in the back and he asked me if I wanted a whole case. I said, "you know it". I was actually shopping online and was gonna order some from NM. With shipping a case woulda cost me close to $90. I got this one for $30 something. My families spice tolerance is a bit low so I had to get the milds. We'll be back in NM at the end of September so I'll fill my freezer with the green gold as soon as I'm back. When we lived in southeasterrn NM there was a family farm 30 minutes away that grew by far the best chiles I've ever eaten-better than Hatch, or the Espanola chile we got in college. But they closed down because the owners retired and the kids were all doctors or engineers and wanted nothing to do with farming. At Haldeman Farms you told them what you wanted, and some workers drove out to the field and picked it. For a few extra bucks they roasted it so all i had to do was package it. We're only 1.5 hours from Hatch and the chile is obviously excellent but we don't have the connection we did with the Haldeman family. They had a variety of fruit and produce, something was available almost year round.Believe it or not, right at my neighborhood Fred Meyers. That is one of my favorite meals. Are those potato and cheese pierogi? Love cabbage pierogi too. Wish we had a good Polish deli near by. I usually make my own. Just pulled a head of cabbage out of the garden. Planning some haluski this week with some homemade kielbasa.View attachment 855586
Tonight’s dinner fresh kielbasa, pierogi from Brooklyn and home fermented sauerkraut.
These were potato and onion and unfortunately they were just meh, and overpriced. As in even though my homemade pierogi have been a little hit or miss over the years at this price and quality I might as well make them.
