What did I cook this weekend.....

I didn't cook it, but last night SWMBO and I went out for a special anniversary dinner and I had a Duroc pork chop. Hooooooolllleeeeeeeyyyyy smokes, was it good. It was as tender and flavorful as some of the best steaks I've ever had. I'll be searching the local butcher shops for more of that kind of stuff.
 
Picked up 4 fresh salmon fillets today. Should I cook all of them tonight and fridge or freezor them until eaten? Or freeze 2 raw, or fridge 2 raw until cooked? Pictures of a salmon sammie to follow :D
 
Wow! Probably one of the easiest and best meals i have ever made. Salmon turned out fantastic and the home made pesto was great! Heres a link for anyone who loves salmon, and its healthy!

I'm on the "elimination diet" to find out whether I've got food allergies. Sous vide turkey breast, frozen and reheated in microwave with buckwheat millet ramen (yech), sweet potato, and shredded kale also cooked via hotel microwave.

Also - homemade mixed nuts (e.g. Dumped a bunch of nuts in Tupperware and ate them) on "reintroduction of nuts" day. Nothing scares coworkers like slamming fistfuls of nuts after saying "I'm testing for food allergies."

No pictures from beans day though. That was the best day ever. Dried chickpeas cooked in olive oil, white pepper, bay leaves, and home grown coriander. Awesome.

Btw - I miss beer.

Just canned up 14 pints of sugarfree applesauce - pic later, after the last 7 jars come out of the steam canner.

Also got 2 pint jars in the fridge. Yum yum.

Will make 2 more batches tomorrow, then dehydrate apples, then make the apple crisp. By then I'll be sick and dang tired of apples! :D

A little late getting around to putting this up, but last weekend, I put a rub on some boneless pork "country style ribs" and browned them. In the crock pot, I put some ketchup, vinegar, a little honey, and crushed red peppers. I deglazed the browning pan with the defatted juices left from making a baked teryaki chicken the day before. It was rich and dark. Everything got mixed together in the crock pot. The result was kind of like a BBQ pork, but with a dark braising liquid that was very tasty over rice.

Roasted white sweet potatoes

I had some of these last night! I microwaved them til tender then laid them on the bottom of a 8x8 pan, put 4 small mahi mahi filets on top and covered it with a tomato sauce. (canned fire roasted tomatoes, sliced jalapenos, jalapeno juice, garlic, mex oregano, thyme in the blender)

The fish was good but the sweet potatoes with the spicy sauce on them were awesome.

Your thanksgiving looks amazing. I'm planning on ATK's version of Julia's deconstructed turkey this year. I usually do a duck but I'm thinking turkey this year.

My favorite quickie sweet potato recipe it to roast them till soft and mash with a canned chipotle pepper or two maybe a pat of butter, simple and delicious!
 
That reminds me, I've got a recipe for a spicy sweet potato soup that's pretty easy and very filling and delicious. It's still a bit too warm to fully enjoy now, but I'll make it a point to get some pics posted when it gets made.
 
Nice job. I love radishes. I never thought about pickling some.

BTW, get a mandolin. They make quick work of slicing things like that.

I'd considered a mandolin for quite some time, but was always more comfortable with the idea of a chef's knife in my hands (not that I'm a chef) than losing a fingertip in a mandolin! I'll probably still get one eventually.
