What could I brew with these left-overs?

Hi,

I'm trying to run down my spares/left-overs so looking for some ideas, hopefully exciting ones i've not thought of, on what to make. I have:

1kg Pale
400g Carafa III
250g CaraMunich II
700g Cara Malt

Hops: Simcoe, Admiral, Fuggles, Saaz, Amarillo (varying amounts but roughly a few handfuls of each)

I plan for this to be a small batch (maybe 12 litres) and make up the malt bill with Dried Malt Extract instead of buying more malt.

In terms of yeast, I've got some Safale 05 and some Scottish Ale that I harvested from a previous brew.

I had been thinking of a Black IPA but recently brewed an DIPA so this felt a bit samey.

Ultra curve-ball ideas are most welcome! :)
 
If you brew today or tomorrow and spend some money for a lager yeast.. you can have yourself a Marzen ;)
 
If you can lager, here is a partial mash schwarzbier recipe for 12 L that I modified to your ingredients. I use 50/50 munich and pilsner base, and less carafa with some chocolate instead, but I think this should work:

1kg pale
180 g carafa
110 g caramunich
1 kg munich LME
.33 oz Saaz at 15
.33 oz Saaz at 0
bittering addition of something at 60 to target about 25-28 IBU's total
German lager yeast
