I'm trying to brew this weekend. I just discovered this local Malthouse (http://www.valleymalt.com), and I really want to use their stuff.

I have the following options:

-Hard Red Winter Wheat
-Crystal Malt
-2-Row Pale Ale Malt


Does anyone have any suggestions as to a recipe that would include one of these? I am not yet at the point in my brewing where I am creating recipes...just working off of others/using kits!

Well with those three you can create quite a few different styles of beer. If you want to just do a basic pale ale, maybe use 10 pounds of the 2-row and 1 pound of the crystal, along with enough American hops to give you a solid IBU level along with some flavor and aroma additions at the end of the boil, and maybe another ounce or two in secondary for dry hops. The hops additions are going to vary depending upon the varieties you use and AA%.
 
Just about any Pale ale /IPA is just Pale malt AKA base malt and a little crystal malt. Crystal come is Degrees lovibond ranging from 10 to 120 or 150. the higher the # the darker the malt. There is a "sticky" at the top of the ingredients forum that would help called "Ingredient Guides - REDUX". I would read up there. A typical APA recipe is 95% base 5% Crystal 20/40/60. or you could brew a wheat beer. I like to use 1/2LB wheat to give some head retention.
 
valley malt is great! i've been using their pilsner malt & their light crystal all summer. anyone in the northeast interested in local organic brewing should check them out.
