What are your thoughts on a persimmon IPA?

Good question, I was going to make a big batch of persimmon wine this year. I collected the fruit from our trees and froze about 40 lbs of Fuyu's. Then I started reading that persimmons were high in magnesium and worked well as a laxative--I read that wine made from them also retained this quality, needless to say they're still frozen...

Google persimmon wine and see what you find. Maybe as an smaller part of a beer it won't be noticeable.

I used some bosc pears in an IPA. It tasted great, but next time I will remove the skins: as the beer aged, some astringency came out in the beer.
 
Personally, fruit & IPA pretty much never go together.

Hops will cover fruit flavors which makes the fruit a waste.

Use low hop levels in any fruit beer.
 
if you do go for it try to use Fuyus over the Hachiya if possible

the Hachiya are more likely to have sharp tannins and astringency if not fully mature

i agree that IPA may not be the best style to use them with esp since persimmons have a fairly mild flavor
