What are your best recipes that use Honey?

I have a good amount of honey sitting around and am looking for good recipies that have honey in them. I have my first batch of mead aging, I habe a ryePA that I used honey in fermenting, I have all the fixings for a wheat beer that I will be adding honey to during fermentation, but there is more honey that needs to get used.

What have you made with honey that came
out great?! And if it's not your family secret what is the recipe?

The East German Kottbusser comes to mind. It uses a little honey & gold molasses after primary. *darn edge spell checker snafued again* There's a thread on here with a couple of our recipes in it.
