I never use this carboy. I assumed, for whatever reason, that it was 7 gallons. No big deal...except I put 3 lbs of corn sugar in for a 7 gallon batch.
More water. I'm saving myself for the Heady's I have for tonight's party.

Just sampled my latest pale ale. It's done. Dry-hopped it.
Had a few ounces of my bretted Saison. The only way I can describe this is FUNK and a lemon tartness that stays on the back of your tongue for a good few minutes. It's tart as hell. I'm going to have to brew this again. It's sitting at 1.006 (8% ABV).
