Just got a call that I'm needed in Massachusetts next week. Maybe I'll head back to my favorite bottle shop and see if they have any Love Child #3. Never had it and with all the hype around it, I have to at least try. 😈

Coffee.

Annoyed that I didn't get another airlock at the LHBS yesterday. Guess I'll just put a solid lid on my fermenter (3 weeks in the bucket) and steal the airlock from that.
 
The DIPA, of course.


Not one of the choices. I have 6.25 gals of cream ale or 5.75 of a pale ale. The more I think about it, the more I want to bottle the cream ale and dry-hop the pale. That'll give me 4-7 days to drink two-cases of beer so I can free-up bottles.

It just seems like you always have DIPA. I was playing the odds. I'd go with the cream.

You would have been right 40% of the time with that answer.

I am dry-hopping my pale with 1.5 oz. of Cascade. I think I used about 1.25 oz. total of Columbus in the boil. Going to be another easy-drinker.

I will be brewing another English IPA next week. Going to smack that wort in the face with hops but I'll be using an English strain to ferment. The last one of these I made, I made with about 2 oz. of Citra and it was a solid beer.

Coffee. Early morning phone call woke me. They claimed it was due to my west coast area code until I told the moron it's 5 am there (at the time of the call) and they're full of ****.
Anyway, just compounds a crappy mood that's gone on for the past few days.
 
Kauai Hawaiian pod of coffee from the Keurig...with Truvia and Half'n'Half. Watching the Food Network.
 
Water all day. Drank too many Weinschorle last night celebrating the bday and almost spilled the beans.....

Probably won't drink for a bit :)
 
Just sampled my latest pale ale. It's done. Dry-hopped it.

Had a few ounces of my bretted Saison. The only way I can describe this is FUNK and a lemon tartness that stays on the back of your tongue for a good few minutes. It's tart as hell. I'm going to have to brew this again. It's sitting at 1.006 (8% ABV).

I can't think of any problems with putting a solid lid (no hole for an airlock) on a beer that hit FG a week ago. Am I overlooking something? It will be bottled 7-14 days from now.

It's probably fine unless it's infected. Also I suspect from your description that you're using a bucket, but I have seen stoppers sucked into carboys before from temperature changes.

Lets play a game called "guess what I did here".


Pretty sure I'm going to do that this weekend too. I have to get an oil change and the place is next to Costco. Having to burn an hour and seeing bulk apple juice is a recipe for disaster.
