Keeping with the theme, another good entry-level sour. And more dregs donated. Just double checked The Mad Fermentationist's viable dregs list beforehand, and actually surprised this has viable bugs. Figured it'd be pasteurized.

The only reason I didnt suspect that this was pasturized is that i got a bottle where the dregs contained some grape must as well. Believe it or not the chunks of grape skin were still very sweet. I agree on this being a good entry level sour

Keeping up with the sour theme. This one's up there among the top in my book. Curious how the one I've had in the "cellar" is fairing.

I absolutely love this beer.

On the coffee, as usual. only had a couple pale ales last night, been busy getting spring cleaning and chores/porching it done around the house to keep posting as i drink a beer.

I have to bottle a beer so I can free-up one of my primaries. This is going to suck. I have a 2 p.m. meeting that I am holding. So, I can't get ****-faced and I've started brewing a lot earlier than I normally would. :mad::mad::mad:

Woke up this morning to catch a flight to San Antonio and found it it was delayed and we would miss our connection.. Ended up hitting another flight that landed me in Tampa where I am sitting at the Cigar city brew pub in the airport while I wait for my 12:30 flight to SA. Not a bad start to vacation. The fresh Jai alai is on point.

I loved that IPA. It was the only beer of yours that I've had and I loved it as much as I thought I would. You brew solid beers man. Really.

Water, breakfast shake, coffee. In reverse order though.

At this point, I am attributing my Pale Ale's failure to astringency from the grain crush.

A thought came to me - does anyone run their first runnings and sparge through a filter as it comes out of the tun? If I filter it through my 100 micron strainer, will I be harming my beer in any way? It seems like it would reduce the possibility of astringency coming from husks that make it into the BK.

Also, Rudy's and the salt lick are on my list for bbq. I heard Franklins in Austin is great, but I am not sure if I want to wait in an 1-3 hour line for brisket.




Rudy's is AWESOME. Don't be put off by it being in a gas station.

I did but there was undoubtedly some smutz that got into the BK. The crush was way finer than I intended.

I'm thinking rice hulls, coarser crush and, maybe, a filtering to eliminate this in the future. It was my first non-BIAB AG.

It's more likely a pH issue than grain husk issue. A decoction boils the grains/husks without causing astringency. What kind of water do you brew with?

How much did you vorluaf? Normally I do at least a half gallon, but sometimes a full gallon. Also, make sure you slowly pour it back in the mash. I always pour it back over a piece of aluminum foil I have poked holes in. Another thing is to make sure you start your vorlauf slowly, with close to the first half gallon run out with the valve half open, and opening it all the way right before you are down vorlaufing.

Did you crush the grain yourself or was it crushed for you?

I would also recommend rice hulls. I always use at least two hand fulls (~1/10lb per batch) but increase that if I am using wheat. I have never had a stuck sparge, knock on wood.

Gravity sample of Row 2 Hill 56 clone, although I can't really taste or smell anything right now thanks to the pollen count.
