Bíere de Noel sample. 1.115 to 1.032ish in 6 days. Some alcohol presence, but not hot at all. Wlp072 kicks a$$. Just added 2nd turbinado to sugar for an approx OG of 1.130.



Couldn't get all 6 pounds of figs in, but probably 5.5.

I was playing poker until about 1 am getting $hitty on Sly Fox Route 113 IPA. Just woke and drank two cups of the coff going through everything I missed last night.

I also had Dave37's American wheat last night when I got home. I wrote some notes about it, but HBT was acting up last night or maybe doing some kind of maintenance, so I couldn't post it. Here's what I wrote down:

Disclaimer: While I neither enjoy nor support Magic Hat, this was the most appropriate glass I had on hand and I wanted it served properly so I swallowed my pride and used this one.

Thanks man. I'm not sure if you saw my post about this one earlier but I purposely kept the hop additions very low because the main purpose for this beer was to be secondarily fermented with raspberry purée. I last second decided to bottle one gallon of the five gal batch just to see how my process went and how clean of a beer I made before adding the raspberry to possibly cover any off flavors in the original product. I'd say the raspberry version will be ready to consume in about a day or two. I should ship one out to you to let you taste the final final product and see what you think. Look for my rye aye review later today! Maybe ill have the pecan ale after dinner tonight as well.
